As we slowly step more into spring, we are starting to see more fresh delicious berries in stores. Make the most of these bright, luscious superfoods by adding them to your breakfast, sprinkling them in salads or adding probiotic goodness by fermenting them! That is right you can easily do a short quick ferment with berries- which makes them tart and fizzy and delicious!
Berries are packed with antioxidants and blueberries specifically can help improve the lining of the uterus and quality and motility of sperm. Something for everyone!
Here's how to ferment:
Fresh whey is easily found by straining fresh organic yogurt- whey is the liquid. Use the left over yogurt in your chia pudding, smoothies or salad dressings.
• 2 cups mixed berries
• 2 tablespoons raw organic honey
• 2 tablespoons fresh whey
• 1/4 teaspoon sea salt
Put the berries in a pint-size jar. Pack them tightly with a wooden spoon but don’t squish them. In a bowl, mix whey, a few tablespoons of water, honey, and salt. Pour the liquid ingredients over the berries, and then fill jar with filtered water, leaving 1 1/2 inches of headspace. Press down with wooden spoon to be sure the water has filled all the air pockets. Add more water if necessary.
*** Very Important!!!!! Make sure the berries are below the waterline, using a weight if needed. Otherwise they get moldy and funky- not in a good way. Put lid on and leave at room temperature for 1-2 days. Store in refrigerator and use within 1 month.
Another note: Do not leave for more than 48 hours as due to the high sugar content of fruit, it will become alcoholic.
The berries are finished fermenting when you see bubbles and when they taste slightly sour with a hint of fizz. Stick them in the fridge and use them up over the next few weeks. They will stop fermenting in the cold of the fridge.
